Bindi’s cheesecake brûlée is a burnt-style cheesecake: a cookie base, a ricotta and mascarpone cream with dollops of caramel, and a caramelized sugar top. Supplied whole (about 3 lb) and serving 14, it thaws in about 8 hours in the refrigerator and keeps 3 days once thawed, which makes it easy to plan for dessert menus, buffets and catering.
